Ingredients
  

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1/2 cup cubed Butter, chilled
  • 3/4 cup Milk
  • 500 g Ground beef halal
  • 1 medium Onion finely chopped
  • 1 teaspoon Garlic powder
  • 1 cup Cheddar cheese grated
  • 1/2 cup BBQ sauce
  • 1 Egg beaten for wash

Instructions
 

Step 1 – Prepare the Dough

  • In a large bowl, mix flour, baking powder, and salt.
  • Add cubed butter and rub into the flour using your fingers until the mixture resembles coarse crumbs.
  • Gradually pour in the milk, stirring until a dough forms.
  • Turn out onto a floured surface and knead lightly.
  • Note: Don’t overwork the dough; a light touch keeps the pockets tender.

Step 2 – Make the Filling

  • In a skillet, cook the ground beef over medium heat until browned.
  • Add onions and garlic powder, cooking until onions are translucent.
  • Remove from heat and stir in BBQ sauce.

Step 3 – Assemble the Hot Pockets

  • Preheat your oven to 375°F (190°C).
  • Roll out the dough to 1/4 inch thickness and cut into 6 rectangles.
  • Divide the filling and cheese among the rectangles, placing on one side.
  • Fold the dough over and seal the edges with a fork.

Step 4 – Bake

  • Place the pockets on a parchment-lined baking sheet.
  • Brush with egg wash.
  • Bake for 25 minutes or until golden brown.
  • Warning: The filling will be piping hot; let them cool for a few minutes before serving.

Notes

  • Freezing: Alabama Hot Pockets freeze well. Cool completely, then wrap individually and freeze. Reheat in the oven for best results.
  • Dough Consistency: If the dough is too sticky, add a little more flour; if too dry, a bit more milk.
