Ingredients
  

  • 6 cups Fresh apples peeled and sliced
  • 1 cup White sugar
  • 1/2 cup Brown sugar
  • 1 1/2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 3 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Unsalted butter chilled and diced
  • 1/2 cup Boiling water

Instructions
 

Step 1 – Prepare the Apples

  • Peel and slice the apples.
  • In a large bowl, mix the sliced apples with white sugar, half of the cinnamon, and nutmeg.
  • Transfer the apple mixture to the baking dish.
  • Note: Choosing the right type of apple is key. I recommend a mix of Granny Smith and Honeycrisp for that perfect balance of tartness and sweetness.

Step 2 – Make the Topping

  • In a separate bowl, combine the flour, remaining cinnamon, baking powder, and salt.
  • Add the chilled butter and mix until the mixture resembles coarse crumbs.
  • Stir in boiling water just until the mixture is evenly moist.

Step 3 – Assemble and Bake

  • Spoon the topping over the apple mixture in the baking dish.
  • Bake in a preheated oven at 350°F (175°C) for about 45 minutes, or until the topping is golden brown.
  • Warning: Be careful not to overmix the topping; it can become tough rather than crumbly and light.

Notes

  • For a richer flavor, you can add a teaspoon of vanilla extract to the apple mixture.
  • If the cobbler starts to brown too quickly, cover it with aluminum foil for the remaining baking time.
