Ingredients
  

  • 4 cups Beef broth
  • 500 g Ground beef
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 large Onion diced
  • 1 can 14 oz Diced tomatoes
  • 2 tbsp Tomato paste
  • 1 can 14 oz Kidney beans, drained
  • To taste Salt
  • To taste Pepper
  • 1 tsp Mixed herbs

Instructions
 

Step 1 – Prep the Base

  • In your large soup pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  • Add the onions, carrots, and celery to the pot and sauté until the onions are translucent.
  • Note: Make sure your veggies are diced uniformly to ensure even cooking.

Step 2 – Build the Flavor

  • Stir in the diced tomatoes, tomato paste, and beef broth.
  • Season with salt, pepper, and mixed herbs.
  • Bring the mixture to a boil, then reduce heat and let it simmer.
  • Warning: Keep a watchful eye to prevent the bottom from catching, as tomato paste tends to stick and burn if not stirred occasionally.

Step 3 – Add the Beans

  • Add the drained kidney beans to the pot.
  • Continue to simmer the soup for another 20 minutes, allowing the flavors to meld beautifully.
  • Note: This simmering phase is crucial for achieving the perfect consistency and flavor concentration in your soup.

Notes
