- 4 cups Beef broth
- 500 g Ground beef
- 1 cup Carrots diced
- 1 cup Celery diced
- 1 large Onion diced
- 1 can 14 oz Diced tomatoes
- 2 tbsp Tomato paste
- 1 can 14 oz Kidney beans, drained
- To taste Salt
- To taste Pepper
- 1 tsp Mixed herbs
Step 1 – Prep the Base
In your large soup pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Add the onions, carrots, and celery to the pot and sauté until the onions are translucent.
Note: Make sure your veggies are diced uniformly to ensure even cooking.
Step 2 – Build the Flavor
Stir in the diced tomatoes, tomato paste, and beef broth.
Season with salt, pepper, and mixed herbs.
Bring the mixture to a boil, then reduce heat and let it simmer.
Warning: Keep a watchful eye to prevent the bottom from catching, as tomato paste tends to stick and burn if not stirred occasionally.
Step 3 – Add the Beans
Add the drained kidney beans to the pot.
Continue to simmer the soup for another 20 minutes, allowing the flavors to meld beautifully.
Note: This simmering phase is crucial for achieving the perfect consistency and flavor concentration in your soup.
- Searing the beef: For an extra flavor kick, sear the beef before you break it apart. It adds a fantastic caramelized flavor.
- Herbs: Feel free to experiment with different herbs such as basil or thyme to tailor the flavor to your liking.
