- 4 cups Fresh blueberries
- 1 cup Granulated sugar
- 3 cups All-purpose flour
- 2 1/2 teaspoons Baking powder
- 1/2 teaspoon Salt
- 1/2 cup 1 stick Cold butter, cubed
- 1 cup Milk
- 1 tablespoon Lemon zest
- 2 teaspoons Vanilla extract
Step 1 – Prepare the Blueberries
Rinse the blueberries and toss them with a quarter cup of sugar and lemon zest.
Spread the sugared blueberries in the bottom of the baking dish.
Note: Coating the blueberries with sugar not only sweetens them but also draws out their natural juices, creating a delicious syrup during baking.
Step 2 – Make the Batter
In a large bowl, whisk together the remaining flour, sugar, baking powder, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.

Warning: Overmixing the batter can lead to a tough cobbler crust. Just mix until the ingredients are incorporated.
Step 3 – Assemble the Cobbler
Dollop the batter over the blueberries, spreading gently to cover them.
Note: Don’t worry about covering every single blueberry—the heat of the oven will help spread the batter.
Step 4 – Bake
Bake in a preheated oven at 375°F (190°C) for 45 minutes or until the top is golden brown and the berries are bubbly.
Note: The golden brown crust is your cue that the cobbler is ready to come out of the oven.
- For a richer flavor, add a scoop of vanilla ice cream on top of the hot cobbler right before serving.
