- 2 cups Long-grain rice
- 4 cups Chicken broth
- 2 tablespoons Olive oil
- 1 medium Onion finely chopped
- 2 cloves Garlic minced
- 2 Carrots diced
- 1 cup Peas
- to taste Salt
- 1 tsp Black pepper
- 2 tbsp Fresh parsley chopped
Step 1 – Prepare the Rice
Rinse the rice under cold water until the water runs clear.
In your rice cooker or pot, combine the rinsed rice with chicken broth.
Note: Using chicken broth instead of water adds a rich, savory flavor to the rice that water simply can’t match.
Step 2 – Sauté the Vegetables
Heat olive oil in a large skillet over medium heat.
Add the onions and garlic, sautéing until they are translucent.
Toss in the carrots and cook for an additional 5 minutes until slightly soft.

Step 3 – Combine and Cook
Stir in the peas and cooked rice into the skillet.
Season with salt and pepper.
Cook together for about 10 minutes, stirring occasionally, until everything is heated through and flavors have melded.
Warning: Be careful not to over-stir as it can turn your rice mushy. Gently fold the ingredients together.
- Toasty Rice: For an added nutty flavor, lightly toast the rice in olive oil before boiling it in broth.
- Herb Choices: Feel free to experiment with other herbs like cilantro or dill if parsley isn’t your top choice.
