- 1 pound Red beans soaked overnight
- 1 pound Smoked sausage sliced
- 1 large Onion chopped
- 1 Bell pepper diced
- 3 stalks Celery chopped
- 4 cloves Garlic minced
- 4 cups Chicken broth
- 2 tablespoons Cajun seasoning
- 2 Bay leaves
- 1 teaspoon Thyme dried
- Salt to taste
- Pepper to taste
Step 1 – Prepare the Beans
Rinse the soaked red beans.
In a large pot, cover them with water and bring to a boil.
Reduce the heat and simmer until the beans are tender, about 1 hour.
