- 1.5 lbs Beef chuck roast cubed
- 2 Large onions thinly sliced
- 4 Garlic cloves minced
- 2 Bell peppers sliced
- 3 Tomatoes diced
- 2 cups Beef broth
- 1 tsp Cumin
- Salt to taste
- Black pepper to taste
- 1/4 cup Fresh cilantro chopped
Step 1: Prepare the Beef
Heat a large skillet over medium-high heat.
Add the beef and sear until browned on all sides.

Step 2: Sauté the Vegetables
Remove the beef and set aside.
In the same skillet, add onions and garlic. Cook until they are soft.
Add bell peppers and cook for an additional 5 minutes.
Warning: Keep an eye on the garlic; it can turn from perfect to burnt in seconds!
Step 3: Simmer
Return the beef to the skillet.
Add tomatoes, beef broth, cumin, salt, and black pepper.
Reduce heat to low, cover, and let it simmer for 35-40 minutes.
Tip: The longer it simmers, the more tender the beef becomes.
- For a thicker sauce, mix a tablespoon of cornstarch with water and add it to the skillet during the last 5 minutes.
- If the mixture seems too dry, don’t hesitate to add more broth to adjust the consistency.
