Ingredients
  

  • 1.5 lbs Beef chuck roast cubed
  • 2 Large onions thinly sliced
  • 4 Garlic cloves minced
  • 2 Bell peppers sliced
  • 3 Tomatoes diced
  • 2 cups Beef broth
  • 1 tsp Cumin
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup Fresh cilantro chopped

Instructions
 

Step 1: Prepare the Beef

  • Heat a large skillet over medium-high heat.
  • Add the beef and sear until browned on all sides.
  • Note: Searing the beef locks in flavors that make carne de res truly special.
  • Step 2: Sauté the Vegetables
  • Remove the beef and set aside.
  • In the same skillet, add onions and garlic. Cook until they are soft.
  • Add bell peppers and cook for an additional 5 minutes.
  • Warning: Keep an eye on the garlic; it can turn from perfect to burnt in seconds!

Step 3: Simmer

  • Return the beef to the skillet.
  • Add tomatoes, beef broth, cumin, salt, and black pepper.
  • Reduce heat to low, cover, and let it simmer for 35-40 minutes.
  • Tip: The longer it simmers, the more tender the beef becomes.

Notes

  • For a thicker sauce, mix a tablespoon of cornstarch with water and add it to the skillet during the last 5 minutes.
  • If the mixture seems too dry, don’t hesitate to add more broth to adjust the consistency.
