  • 400 grams Penne pasta
  • 2 tablespoons Olive oil
  • 500 grams Boneless chicken breast diced
  • 200 grams Andouille sausage sliced
  • 1 Red bell pepper diced
  • 1 Green bell pepper diced
  • 1 Yellow onion diced
  • 3 cloves Garlic minced
  • 250 ml Chicken broth
  • 250 ml Heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt to taste
  • Freshly ground black pepper to taste
  • Spring onions for garnish
  • Parmesan cheese for garnish

Instructions
 

Step 1 – Prepare the Pasta

  • Cook the penne pasta in a large pot of salted boiling water until al dente. Drain and set aside.

Step 2 – Sauté the Meats

  • Heat olive oil in a large skillet over medium-high heat.
  • Add diced chicken breast and sliced andouille sausage. Cook until the chicken is golden and no longer pink.

Step 3 – Add Vegetables

  • To the same skillet, add diced bell peppers and onion. Sauté until they are soft.

  • Pour in the chicken broth and heavy cream. Bring to a boil.
