- 8 pieces Chicken thighs
- 4 tablespoons Unsalted butter
- 1/3 cup All-purpose flour
- 2 cups Chicken broth
- 1/2 cup Heavy cream
- 1 medium Onion finely chopped
- 2 cloves Garlic minced
- 1 tablespoon Fresh thyme
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
Step 1 – Prep the Chicken
Pat the chicken thighs dry with paper towels.
Season both sides generously with salt and black pepper.
A good seasoning makes all the difference—don’t skimp on the salt and pepper!
Step 2 – Brown the Chicken
Heat the butter in a large skillet over medium-high heat.
Add the chicken thighs, skin-side down, and cook until the skin is golden and crispy, about 7-8 minutes.

Step 3 – Make the Gravy
In the same skillet, add the onion and garlic; cook until soft, about 3 minutes.
Sprinkle the flour over the onion and garlic, stir to coat and cook for 1 minute.
Gradually whisk in the chicken broth, ensuring no lumps form.
Bring to a boil, then reduce the heat and simmer until thickened, about 5 minutes.
Stir in the heavy cream and thyme, then return the chicken to the skillet.
Let the chicken simmer in the gravy for added juiciness.
Step 4 – Simmer and Serve
Reduce the heat to low and cover the skillet.
Let the chicken cook through and the flavors meld, about 25 minutes.
Adjust seasoning with salt and pepper if needed.
- If the gravy is too thick, add a bit more broth to reach your desired consistency.
