Ingredients
  

  • 8 pieces Chicken thighs
  • 1 1/2 cups Long grain rice
  • 3 cups Chicken broth
  • 1 finely chopped Onion
  • 3 cloves minced Garlic
  • 2 diced Carrots
  • 1 cup Peas
  • 2 tablespoons Olive oil
  • To taste Salt
  • To taste Black pepper
  • 1 teaspoon Fresh thyme

Instructions
 

Step 1 – Prepare the Ingredients

  • Chop and dice: Start by finely chopping the onions and mincing the garlic. Dice the carrots evenly to ensure they cook uniformly.
  • Season the chicken: Season the chicken thighs with salt and pepper generously on both sides.
  • Note: Always pat the chicken dry before seasoning to ensure it gets a nice, crispy exterior.

Step 2 – Brown the Chicken

  • Heat the oil: In your large skillet, heat the olive oil over medium-high heat.
  • Cook the chicken: Place the chicken thighs skin-side down and cook until golden brown, about 5 minutes per side. Remove the chicken and set aside.

Step 3 – Sauté the Vegetables

  • Cook the aromatics: In the same pan, add the onions and garlic. Cook until the onions are translucent.
  • Add carrots and peas: Throw in the diced carrots and cook for about 3 minutes before adding the peas.

Step 4 – Combine and Cook

  • Add rice: Stir in the long grain rice and let it toast for a couple of minutes, just until some grains start to turn golden.
  • Pour the broth: Add the chicken broth and bring to a simmer.
  • Cook: Return the chicken to the skillet, cover, and let it simmer on low heat for 30 minutes or until the rice is fluffy and the chicken is cooked through.

Step 5 – Final Touches

  • Add herbs: Sprinkle fresh thyme over the dish in the last few minutes of cooking.
  • Note: Fresh herbs add a burst of flavor; add them towards the end to preserve their vibrant taste and color.
