Equipment

  • A large skillet
  • Measuring cups and spoons
  • A cutting board
  • A sharp knife
  • A blender or food processor (for the sauce)
  • Tongs

Ingredients

  • 4 pieces Chicken breasts boneless
  • 2 tablespoons Olive oil
  • 3 cloves Garlic minced
  • 2 Chipotle peppers in adobo sauce
  • 2 tablespoons Adobo sauce
  • 1 tablespoon Honey
  • 1 Lime juiced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • To taste Salt and pepper

Instructions

Step 1- Prepare the Chicken

  • Prepare the Chicken:
  • Start by slicing the chicken breasts horizontally to create thinner slices. This ensures they cook evenly and soak up more flavor.
  • Season both sides with salt and pepper.
  • Tip: Always pat the chicken dry before seasoning to help the spices stick better.

Step 2- Make the Chipotle Marinade

  • Combine Ingredients:
  • In a blender, combine the chipotle peppers, adobo sauce, honey, lime juice, garlic, cumin, and oregano. Blend until smooth.
  • Taste the marinade and adjust seasoning if necessary. It should be spicy, smoky, and slightly sweet.
  • Warning: When handling chipotle peppers, consider wearing gloves or wash your hands thoroughly afterwards to avoid irritation.

Step 3- Marinate the Chicken

  • Marinate:
  • Place the chicken in a large bowl or resealable bag.
  • Pour the marinade over the chicken, making sure each piece is well-coated.
  • Let it marinate in the refrigerator for at least 30 minutes, or for best results, overnight.
  • Note: Marinating the chicken for longer will intensify the flavors.

Step 4- Cook the Chicken

  • Cook:
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken pieces, discarding any excess marinade.
  • Cook for about 5-6 minutes on each side, or until the chicken is golden and cooked through.
  • Fact: Cooking the chicken on medium-high heat helps to sear the exterior, locking in the juices and flavors.

Notes

  • If the marinade is too spicy, add a bit more honey to balance out the heat.
  • You can grill the chicken instead of pan-frying for an even smokier flavor.
  • Store any leftover chicken in an airtight container in the refrigerator for up to three days.
