Equipment

Ingredients
  

  • 1 and 3/4 cups All-purpose flour
  • 1 cup Granulated sugar
  • 3/4 cup Cocoa powder
  • 2 teaspoons Espresso powder
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 cup Buttermilk
  • 1/2 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water

Instructions
 

Step 1 – Prep and Preheat

  • Preheat your oven to 350°F (175°C).
  • Grease and flour your cake pan or line it with parchment paper to prevent sticking.

Step 2 – Mix Dry Ingredients

  • Sift together the flour, sugar, cocoa, espresso powder, baking powder, baking soda, and salt into a large mixing bowl.
  • Sifting helps to aerate your ingredients which makes for a lighter, fluffier cake.

Step 3 – Combine Wet Ingredients

  • In a separate bowl, whisk together the eggs, buttermilk, oil, and vanilla.
  • Add the wet ingredients to the dry ingredients and mix until just combined.

Step 4 – Add Boiling Water

  • Carefully stir in the boiling water to your batter. It will be very liquid, but this is what makes the cake incredibly moist.
  • Be careful not to overmix once the water is added. Just blend it until everything is combined well.

Step 5 – Bake the Cake

  • Pour the batter into the prepared cake pan.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 6 – Cool

  • Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  • Letting it cool in the pan helps the structure of the cake set and prevents it from breaking apart.

Notes

  • For a dairy-free version, substitute almond milk mixed with 1 teaspoon of vinegar for the buttermilk.
  • You can add a tablespoon of instant coffee granules to the boiling water for an even deeper coffee flavor.
