- 1 and 3/4 cups All-purpose flour
- 1 cup Granulated sugar
- 3/4 cup Cocoa powder
- 2 teaspoons Espresso powder
- 2 teaspoons Baking powder
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Salt
- 2 Eggs
- 1 cup Buttermilk
- 1/2 cup Vegetable oil
- 2 teaspoons Vanilla extract
- 1 cup Boiling water
Step 1 – Prep and Preheat
Preheat your oven to 350°F (175°C).
Grease and flour your cake pan or line it with parchment paper to prevent sticking.
Always start with a preheated oven for the best rise on your cake!
Step 2 – Mix Dry Ingredients
Sift together the flour, sugar, cocoa, espresso powder, baking powder, baking soda, and salt into a large mixing bowl.
Sifting helps to aerate your ingredients which makes for a lighter, fluffier cake.
Step 3 – Combine Wet Ingredients
In a separate bowl, whisk together the eggs, buttermilk, oil, and vanilla.
Add the wet ingredients to the dry ingredients and mix until just combined.

Step 4 – Add Boiling Water
Carefully stir in the boiling water to your batter. It will be very liquid, but this is what makes the cake incredibly moist.
Be careful not to overmix once the water is added. Just blend it until everything is combined well.
Step 5 – Bake the Cake
Pour the batter into the prepared cake pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Step 6 – Cool
Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Letting it cool in the pan helps the structure of the cake set and prevents it from breaking apart.
- For a dairy-free version, substitute almond milk mixed with 1 teaspoon of vinegar for the buttermilk.
- You can add a tablespoon of instant coffee granules to the boiling water for an even deeper coffee flavor.
