- 3 pounds Chuck roast
- 2 tablespoons Olive oil
- 3 large Carrots peeled and sliced
- 2 medium Onions chopped
- 4 cloves Garlic minced
- 2 cups Beef broth
- 1 cup Red wine
- 1 tablespoon Fresh thyme
- 1 tablespoon Fresh rosemary
- To taste Salt
- To taste Black pepper
Step 1 – Prepare the Chuck Roast
Pat the chuck roast dry with paper towels.
Season generously with salt and black pepper.
Heat olive oil in a Dutch oven over medium-high heat.
Sear the roast on all sides until golden brown, about 3-4 minutes per side.
Note: Searing the meat is key to locking in those juices and flavors!
Step 2 – Sauté the Vegetables
Remove the roast and set aside.
In the same pot, add onions and carrots. Cook until they start to soften.
Stir in minced garlic and cook for another minute until fragrant.
Step 3 – Deglaze and Slow Cook
Pour in red wine to deglaze the pot, scraping up any browned bits from the bottom.
Add beef broth, thyme, and rosemary.
Return the roast to the pot and bring to a simmer.
Cover and transfer to a preheated oven at 325°F. Cook for about 3 hours or until the meat is fork-tender.
Warning: Always check the roast with a meat thermometer to ensure it has reached a safe internal temperature of at least 145°F.
