Ingredients
  

  • 3 pounds Chuck roast
  • 2 tablespoons Olive oil
  • 3 large Carrots peeled and sliced
  • 2 medium Onions chopped
  • 4 cloves Garlic minced
  • 2 cups Beef broth
  • 1 cup Red wine
  • 1 tablespoon Fresh thyme
  • 1 tablespoon Fresh rosemary
  • To taste Salt
  • To taste Black pepper

Instructions
 

Step 1 – Prepare the Chuck Roast

  • Pat the chuck roast dry with paper towels.
  • Season generously with salt and black pepper.
  • Heat olive oil in a Dutch oven over medium-high heat.
  • Sear the roast on all sides until golden brown, about 3-4 minutes per side.
  • Note: Searing the meat is key to locking in those juices and flavors!

Step 2 – Sauté the Vegetables

  • Remove the roast and set aside.
  • In the same pot, add onions and carrots. Cook until they start to soften.
  • Stir in minced garlic and cook for another minute until fragrant.

Step 3 – Deglaze and Slow Cook

  • Pour in red wine to deglaze the pot, scraping up any browned bits from the bottom.
  • Add beef broth, thyme, and rosemary.
  • Return the roast to the pot and bring to a simmer.
  • Cover and transfer to a preheated oven at 325°F. Cook for about 3 hours or until the meat is fork-tender.
  • Warning: Always check the roast with a meat thermometer to ensure it has reached a safe internal temperature of at least 145°F.

  • Deglazing: Don’t skip the deglazing step; it adds an incredible depth of flavor to your sauce.
  • Cooking Time: Cooking times can vary based on the size and cut of your roast, so use a meat thermometer to check doneness.
