- 1 cup Long grain white rice
- 1 can 400 ml Coconut milk
- 1/2 cup Water
- 1 tablespoon Lime zest
- 3 tablespoons Fresh lime juice
- 1/2 teaspoon Salt
- 2 tablespoons Fresh cilantro chopped
- 2 tablespoons Fresh coconut shredded (optional)
Step 1 – Prep the Rice
Rinse the rice under cold water using a fine mesh strainer until the water runs clear.
This helps remove excess starch and prevents the rice from becoming too sticky.
Note: Always rinse your rice well to achieve that perfect fluffiness!
Step 2 – Cook the Rice
In a rice cooker or medium saucepan, combine the rinsed rice, coconut milk, water, and salt.
Set the rice cooker to cook or bring the mixture to a boil, then reduce to a simmer, covering the pot. Cook for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
Warning: Keep an eye on the rice as it cooks; coconut milk can boil over quickly!
Step 3 – Add Lime Zest and Juice
Once the rice is cooked, fluff it with a fork.
Stir in the lime zest and fresh lime juice while the rice is still warm to enhance the flavors.
Note: Adding lime zest and juice while the rice is warm will help infuse the flavors more deeply.

Garnish with chopped cilantro and, if you like, some freshly shredded coconut for added texture and sweetness.
