Step 1 – Prepare the Ingredients

  • Crack the eggs into a mixing bowl.
  • Add the cottage cheese, chives, salt, and pepper.
  • Whisk until the mixture is well combined.
  • Note: Whisking properly integrates the cottage cheese with the eggs, creating a fluffier texture once cooked.

Step 2 – Cook the Eggs

  • Heat the olive oil in the skillet over medium heat.
  • Pour the egg mixture into the skillet.
  • Let the eggs sit for about 1 minute until the edges start to set, then gently stir with a spatula.
  • Cook for about 3-4 minutes, stirring occasionally, until the eggs are fully cooked but still soft and creamy.
  • Warning: Keep an eye on the heat! Too high, and the eggs will become rubbery.

Notes

  • If you prefer your eggs extra fluffy, add an additional tablespoon of milk to the mixture.
  • For a spicy kick, sprinkle some red pepper flakes into the egg mixture before cooking.
