- 4 large Potatoes peeled
- 1 medium Onion diced
- 2 stalks Celery chopped
- 3 cloves Garlic minced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 2 tbsp Butter
- 1 tsp Salt
- 1/2 tsp Pepper
- Chopped chives for garnish
- Shredded cheese for garnish
Step 1 – Prepare the Vegetables
Step 2 – Sauté the Vegetables
Melt butter in a large pot over medium heat.
Add the onions and celery, sauté until soft, about 5 minutes.
Add the garlic and cook for another minute.
Warning: Keep an eye on the garlic; it burns easily and can turn bitter.
Step 3 – Cook the Potatoes
Add the chopped potatoes to the pot.
Pour in the chicken broth, ensuring the potatoes are fully submerged.
Season with salt and pepper.
Bring to a boil, then reduce heat to a simmer.
Cover and let cook until potatoes are tender, about 20 minutes.
Step 4 – Blend the Soup
Once the potatoes are soft, use an immersion blender to blend the soup directly in the pot until smooth and creamy.
Alternatively, you can transfer the soup in batches to a blender.
Note: Be careful when blending hot liquids; start slow to avoid splashes.
Step 5 – Add the Cream
Stir in the heavy cream and heat through.
Adjust seasoning if necessary.
Fact: The addition of cream not only adds richness but also gives the soup a beautiful silky texture.
- For a thicker soup, simmer longer before adding the cream.
- If the soup is too thick, thin it with a bit more broth or water to reach your desired consistency.
