Ingredients
  

  • 4 large Potatoes peeled
  • 1 medium Onion diced
  • 2 stalks Celery chopped
  • 3 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tbsp Butter
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Chopped chives for garnish
  • Shredded cheese for garnish

Instructions
 

Step 1 – Prepare the Vegetables

  • Peel and chop the potatoes into cubes.
  • Finely dice the onion.
  • Chop the celery.
  • Note: Make sure all vegetables are similar in size for even cooking.

Step 2 – Sauté the Vegetables

  • Melt butter in a large pot over medium heat.
  • Add the onions and celery, sauté until soft, about 5 minutes.
  • Add the garlic and cook for another minute.
  • Warning: Keep an eye on the garlic; it burns easily and can turn bitter.

Step 3 – Cook the Potatoes

  • Add the chopped potatoes to the pot.
  • Pour in the chicken broth, ensuring the potatoes are fully submerged.
  • Season with salt and pepper.
  • Bring to a boil, then reduce heat to a simmer.
  • Cover and let cook until potatoes are tender, about 20 minutes.

Step 4 – Blend the Soup

  • Once the potatoes are soft, use an immersion blender to blend the soup directly in the pot until smooth and creamy.
  • Alternatively, you can transfer the soup in batches to a blender.
  • Note: Be careful when blending hot liquids; start slow to avoid splashes.

Step 5 – Add the Cream

  • Stir in the heavy cream and heat through.
  • Adjust seasoning if necessary.
  • Fact: The addition of cream not only adds richness but also gives the soup a beautiful silky texture.

Notes

  • For a thicker soup, simmer longer before adding the cream.
  • If the soup is too thick, thin it with a bit more broth or water to reach your desired consistency.
