Equipment

  • A round cake pan (9 inches)
  • Mixing bowls
  • Electric mixer
  • Measuring cups and spoons
  • A saucepan
  • A wire rack for cooling

Ingredients

  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 3/4 cup Unsalted butter softened
  • 1 cup Granulated sugar
  • 4 large Eggs
  • 1 tsp Vanilla extract
  • 1 cup Milk
  • 1/2 cup Mixed nuts chopped

Instructions

Step 1 – Prepare The Cake Batter

  • Warm your oven up to 175°F (350°C) and grease a cake pan.
  • Scatter the flour, baking powder, and salt in a bowl.
  • In another bowl, cream the butter and sugar until light and fluffy using an electric mixer.
  • Adding the eggs one at a time and beating well after each one is added. Stir in the vanilla extract.
  • Carefully add the flour mixture in two parts, starting with flour and ending with milk. Stir just until combined.
  • Fold in the chopped nuts.
  • Put the batter into the pan that has been prepared and make the top smooth.
  • Note: For an even rise, tap the pan on the counter a few times to release air bubbles.

Step 2 – Bake The Cake

  • Put it in the oven and bake for 45 minutes, or until a toothpick stuck in the middle comes out clean.
  • Cool the cake in the pan for 10 minutes, then move it to a wire rack to cool all the way down.
  • Warning: Be careful not to overbake the cake as it can dry out quickly.

Step 3 – Prepare The Fricassee Sauce

  • In a saucepan, combine 1 cup of cream, 1/4 cup of sugar, and 1 tsp of vanilla extract.
  • Heat over medium until the sugar dissolves and the mixture is hot but not boiling.
  • Drizzle the warm sauce over the cooled cake.
  • Fact: The sauce for a fricassee cake is similar to a thin crème anglaise, which typically accompanies desserts.

Notes

  • For a moister cake, poke holes in the cake with a fork before pouring over the sauce.
  • You can customize the nuts based on preference; walnuts, pecans, or almonds work great in this recipe.
