- 1 pound Large sea scallops
- 2 tablespoons Unsalted butter
- 2 tablespoons Extra-virgin olive oil
- 2 cloves Garlic minced
- 1 teaspoon Lemon zest
- 2 tablespoons Fresh parsley chopped
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
Step 1 – Prep the Scallops
Ensure scallops are dry by patting them with a paper towel.
Season both sides with salt and pepper.
Remember, dry scallops sear better, resulting in a beautifully crisp exterior.
Step 2 – Heat the Skillet
Step 3 – Cook the Scallops
Place the scallops in the pan so that they don’t touch each other.
Cook for about 2-3 minutes on each side or until a golden crust forms and scallops are translucent.
Remove scallops from the skillet and set aside on a plate.
Warning: Do not overcrowd the skillet; this may cause the scallops to steam rather than sear.
Step 4 – Make the Garlic-Lemon Topping
Lower the heat to medium.
Add minced garlic to the same skillet and sauté for about 30 seconds or until fragrant.
Stir in lemon zest and half of the chopped parsley.
- For an extra kick: Add a pinch of red pepper flakes to the garlic while sautéing.
- Storage: Best enjoyed fresh, but you can refrigerate leftovers in an airtight container for up to two days.
