Ingredients
  

  • 1 pound Large sea scallops
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Extra-virgin olive oil
  • 2 cloves Garlic minced
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley chopped
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions
 

Step 1 – Prep the Scallops

  • Ensure scallops are dry by patting them with a paper towel.
  • Season both sides with salt and pepper.
  • Remember, dry scallops sear better, resulting in a beautifully crisp exterior.

Step 2 – Heat the Skillet

  • Heat olive oil and butter in the skillet over medium-high heat until butter melts and starts to sizzle.

Step 3 – Cook the Scallops

  • Place the scallops in the pan so that they don’t touch each other.
  • Cook for about 2-3 minutes on each side or until a golden crust forms and scallops are translucent.
  • Remove scallops from the skillet and set aside on a plate.
  • Warning: Do not overcrowd the skillet; this may cause the scallops to steam rather than sear.

Step 4 – Make the Garlic-Lemon Topping

  • Lower the heat to medium.
  • Add minced garlic to the same skillet and sauté for about 30 seconds or until fragrant.
  • Stir in lemon zest and half of the chopped parsley.

Step 5 – Serve

  • Spoon the garlic-lemon mixture over the cooked scallops.
  • Garnish with the remaining parsley and serve immediately.

Notes

  • For an extra kick: Add a pinch of red pepper flakes to the garlic while sautéing.
  • Storage: Best enjoyed fresh, but you can refrigerate leftovers in an airtight container for up to two days.
