Equipment

  • Large pot
  • Food processor
  • Mixing bowls
  • Baking sheet
  • Parchment paper
  • Deep fryer or a heavy-bottomed pot

Ingredients

  • 1 lb Boudin sausage casings removed
  • 2 cups Hot Cheetos finely crushed
  • 1 cup All-purpose flour
  • 3 large Eggs beaten
  • As needed Vegetable oil for frying
  • 1/4 cup Cream cheese softened
  • 2 tablespoons Green onions finely chopped

Instructions

Step 1 – Prepare the Boudin Mixture

  • Remove the boudin from its casings and place it in a large bowl.
  • Mix in the cream cheese and green onions until well combined.
  • Shape the mixture into small, golf ball-sized spheres.
  • “Consistency is key. Ensure the boudin balls are compact and hold their shape.”

Step 2 – Dredging and Coating

  • Set up your dredging station with three shallow bowls: one for flour, one for beaten eggs, and one for crushed hot Cheetos.
  • Roll each boudin ball in flour, dip in egg, and then coat generously with crushed hot Cheetos.
  • Place the coated balls on a parchment-lined baking sheet.
  • “Make sure each ball is thoroughly coated with Cheetos for that perfect crunch.”

Step 3 – Fry to Perfection

  • Heat oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).
  • Fry the boudin balls in batches until golden brown, about 3-4 minutes.
  • Remove with a slotted spoon and drain on paper towels.
  • “Don’t overcrowd the fryer; give the balls plenty of space to cook evenly.”

Notes

  • Temperature Control: Keep the oil temperature consistent for the best results.
  • Serving: Serve hot with your choice of dipping sauce for an extra kick.
