- 3-4 fresh jalapenos
- 4 garlic cloves
- 1/2 cup fresh cilantro
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1 tsp cumin powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp honey optional
Step 1 – Prep the Jalapenos
Wash and dry the jalapenos.
Slice them lengthwise and remove seeds if you want less heat (leave them in for a real kick).
Warning: Be careful when handling jalapenos. Their oils can irritate the skin and eyes, so wash your hands thoroughly afterward or use gloves.
Step 2 – Prepare the Other Ingredients
Peel the garlic cloves.
Roughly chop the fresh cilantro.
Squeeze the lime juice, making sure to avoid seeds for a smooth finish.

Step 3 – Blend the Ingredients
Add the jalapenos, garlic, cilantro, lime juice, olive oil, cumin, salt, and pepper into the blender or food processor.
Pulse until the mixture reaches a smooth consistency.
Fact: Lime juice not only adds acidity but helps tenderize meat, making it ideal for marinades.
Step 4 – Adjust and Taste
Taste the marinade. If it’s too spicy, add a touch of honey to balance out the heat.
Adjust salt and pepper as needed.
Note: This marinade works best if left to sit for about 30 minutes before use. It allows the flavors to meld together.
Step 5 – Marinate
Pour the jalapeno marinade over your chosen ingredient (chicken, veggies, etc.).
Let it marinate for at least 30 minutes, but ideally 2-3 hours for maximum flavor absorption.
Tip: For vegetables, try shorter marination times, around 15-20 minutes, to avoid overpowering the natural flavors.
- Adjust the Heat: If you want a milder marinade, remove all jalapeno seeds and add a dash of honey.
- Cilantro Lovers: Double the cilantro if you love a fresh, green kick.
- Batch Preparation: This marinade keeps for about a week in the fridge. Make extra to save time later!
- Zest it Up: Add a bit of lemon zest for a citrusy twist.
