Ingredients
  

  • 1 cup Long grain rice
  • 2 cups Chicken broth
  • 2 tablespoons Olive oil
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1/2 cup Carrots diced
  • 1/2 cup Peas
  • 1/2 cup Red bell pepper diced
  • To taste Salt
  • To taste Ground black pepper
  • 1 teaspoon Cumin

Instructions
 

Step 1 – Prep the Rice

  • Rinse the rice under cold water until the water runs clear.
  • In a large skillet, heat the olive oil over medium heat.
  • Note: Rinsing the rice helps remove excess starch, which can make your rice sticky.

Step 2 – Sauté the Vegetables

  • Add the chopped onion, garlic, and red bell pepper to the skillet. Sauté until the onions are translucent.
  • Stir in the carrots and peas, cooking for an additional 5 minutes.
  • Warning: Be careful not to burn the garlic, as it can turn bitter.

Step 3 – Cook the Rice

  • Stir in the rinsed rice and toast it lightly for about 2 minutes.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Reduce the heat, cover, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Fact: Toasting the rice in oil before adding the broth enhances its nutty flavor and helps keep the grains separate.

Notes

  • For a vegetarian version of this Juan Pollo Rice Recipe, substitute chicken broth with vegetable broth.
  • If the rice is undercooked, add a few tablespoons of water and continue cooking on low heat.
