- 1 cup Long grain rice
- 2 cups Chicken broth
- 2 tablespoons Olive oil
- 1 medium Onion finely chopped
- 2 cloves Garlic minced
- 1/2 cup Carrots diced
- 1/2 cup Peas
- 1/2 cup Red bell pepper diced
- To taste Salt
- To taste Ground black pepper
- 1 teaspoon Cumin
Step 1 – Prep the Rice
Rinse the rice under cold water until the water runs clear.
In a large skillet, heat the olive oil over medium heat.
Note: Rinsing the rice helps remove excess starch, which can make your rice sticky.
Step 2 – Sauté the Vegetables
Add the chopped onion, garlic, and red bell pepper to the skillet. Sauté until the onions are translucent.
Stir in the carrots and peas, cooking for an additional 5 minutes.
Warning: Be careful not to burn the garlic, as it can turn bitter.
Step 3 – Cook the Rice
Stir in the rinsed rice and toast it lightly for about 2 minutes.
Pour in the chicken broth and bring the mixture to a boil.
Reduce the heat, cover, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
Fact: Toasting the rice in oil before adding the broth enhances its nutty flavor and helps keep the grains separate.
