- 6 large Yellow onions thinly sliced
- 3 tablespoons Unsalted butter
- 2 tablespoons Olive oil
- 8 cups Beef stock
- 2 Bay leaves
- 6 sprigs Fresh thyme
- 12 slices Baguette
- 1 1/2 cups Gruyère cheese shredded
- Salt and pepper to taste
Step 1 – Prepare the Onions
Peel and thinly slice the onions.
In your Dutch oven, melt the butter with the olive oil over medium heat.
Add the onions and cook, stirring frequently, until they are deeply caramelized, about 45 minutes.
Note: Caramelizing onions slowly and gently is key to unlocking their natural sweetness.
Step 2 – Simmer the Soup
Once the onions are caramelized, add the beef stock, bay leaves, and thyme.
Bring to a boil, then reduce the heat and simmer for 30 minutes.
Remove the bay leaves and thyme, then season with salt and pepper to taste.
Warning: Be careful not to burn the onions as it can give the soup a bitter taste.
Step 3 – Broil the Cheese Topping
Preheat your broiler.
Ladle the soup into oven-safe bowls.
Top each with two slices of baguette and a generous amount of shredded Gruyère.
Broil until the cheese is bubbly and golden brown, about 3-5 minutes.
Note: Keep a close eye on the soup under the broiler as the cheese can burn quickly.
- Onion Choice: Yellow onions are recommended for their perfect balance of sweet and sharp flavors.
- Cheese Options: If you can’t find Gruyère, Swiss or mozzarella can be decent substitutes, though Gruyère is traditional for its nutty flavor.
