Equipment

  • A good-quality fillet knife
  • A large frying pan
  • A mixing bowl
  • Measuring cups and spoons
  • A spatula

Ingredients

  • 4 pieces Longjaw Mud Snapper fillets
  • 2 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 2 cloves Fresh garlic minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 2 tablespoons Fresh parsley chopped
  • Lemon slices for garnish

Instructions

Step 1- Prepare the Fish

  • Rinse the Longjaw Mud Snapper fillets under cold water and pat them dry with paper towels.
  • In a bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper.
  • Make sure the fish is completely dry to ensure it gets a nice sear.

Step 2- Marinate

  • Place the fillets in a shallow dish and pour the marinade over them, making sure each piece is well-coated.
  • Let them marinate in the refrigerator for at least 10 minutes to absorb all the flavors.

Step 3- Cook the Snapper

  • Heat a large pan over medium heat and add the marinated fillets.
  • Cook for about 10 minutes on each side or until the fish flakes easily with a fork.
  • Warning: Do not overcrowd the pan as it can lower the temperature causing the fish to steam rather than sear.

Step 4- Garnish and Serve

  • Transfer the cooked fillets onto a serving dish.
  • Sprinkle dried oregano and fresh parsley over the top.
  • Garnish with lemon slices and serve immediately.

Notes

  • For a crispier crust, lightly dust the fillets with some flour before frying.
  • Always heat the pan before adding the fish to avoid sticking.
