Ingredients
  

  • 4 cups Mandarin oranges peeled and segmented
  • 4 cups Mixed salad greens
  • 1/4 cup Red onion thinly sliced
  • 1/3 cup Sliced almonds toasted
  • 1/4 cup Dried cranberries
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Olive oil
  • 3 tablespoons White wine vinegar
  • 2 tablespoons Honey

Step 1 – Prep the Ingredients

  • Wash and dry the mixed greens.
  • Peel the Mandarin oranges, and segment them.
  • Thinly slice the red onion.
  • Toast the sliced almonds lightly in a dry pan until golden.
  • Note: Ensuring your ingredients are fresh is key to a stellar Mandarin orange salad.

Step 2 – Make the Dressing

  • In a small bowl, whisk together olive oil, white wine vinegar, honey, salt, and pepper until emulsified.
  • Taste and adjust seasoning if necessary.

Step 3 – Assemble the Salad

  • In your large mixing bowl, toss the mixed greens with the red onion, half of the Mandarin orange segments, and the dressing until everything is beautifully coated.
