- 4 cups Mandarin oranges peeled and segmented
- 4 cups Mixed salad greens
- 1/4 cup Red onion thinly sliced
- 1/3 cup Sliced almonds toasted
- 1/4 cup Dried cranberries
- 1/2 cup Feta cheese crumbled
- 1/4 cup Olive oil
- 3 tablespoons White wine vinegar
- 2 tablespoons Honey
- To taste Salt and pepper
Step 1 – Prep the Ingredients
Wash and dry the mixed greens.
Peel the Mandarin oranges, and segment them.
Thinly slice the red onion.
Toast the sliced almonds lightly in a dry pan until golden.
Note: Ensuring your ingredients are fresh is key to a stellar Mandarin orange salad.
Step 2 – Make the Dressing
In a small bowl, whisk together olive oil, white wine vinegar, honey, salt, and pepper until emulsified.
Taste and adjust seasoning if necessary.
Warning: Go easy on the salt, as the feta cheese adds a briny flavor.
Step 3 – Assemble the Salad
In your large mixing bowl, toss the mixed greens with the red onion, half of the Mandarin orange segments, and the dressing until everything is beautifully coated.
Gently fold in the remaining Mandarin orange segments to keep them intact.
Fact: Mandarin oranges add a burst of citrus that not only tastes great but also packs a heap of vitamin C!
Step 4 – Garnish and Serve
Sprinkle the toasted almonds, dried cranberries, and crumbled feta cheese over the top.
Serve immediately to ensure the greens stay crisp and the almonds crunchy.
- Chill your salad plates before serving to keep the salad cool and fresh.
- Add protein: Chicken or shrimp make great additions if you want a heartier meal.
