Ingredients
  

  • 4 medium Chicken breasts
  • To taste Salt and black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic minced
  • 1 cup Heavy cream
  • ½ cup Chicken broth
  • ½ cup Sun-dried tomatoes chopped
  • ¼ cup Fresh basil chopped
  • ½ cup Parmesan cheese grated
  • 400 grams Pasta e.g., fettuccine

Instructions
 

Step 1 – Prepare the Chicken

  • Season chicken breasts generously with salt and pepper.
  • Heat olive oil in a large skillet over medium heat.
  • Add chicken to the skillet and cook until golden and no longer pink in the middle, about 5-7 minutes per side.
  • Remove chicken and set aside on a plate.
  • Keep your chicken moist by letting it rest after cooking before slicing it.

Step 2 – Make the Sauce

  • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  • Pour in heavy cream, chicken broth, and sun-dried tomatoes. Bring to a simmer.
  • Reduce heat and let simmer until the sauce thickens, about 5 minutes.
  • Stir in grated Parmesan cheese until melted and smooth.

Step 3 – Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package instructions until al dente.
  • Drain and return to the pot.

  • Slice the rested chicken into strips.
  • Add the chicken and fresh basil to the sauce, tossing to combine.
  • Pour the sauce over the cooked pasta, tossing again to coat the pasta evenly.
