Equipment

  • Large pot
  • Strainer
  • Mixing bowl
  • Measuring cups and spoons
  • Whisk
  • Baking dish (9×13 inches recommended)
  • Saucepan

Ingredients

  • 1 lb Macaroni
  • 4 tablespoons Butter
  • 1/4 cup All-purpose flour
  • 3 cups Milk
  • 4 oz Cream cheese
  • 3 cups Shredded sharp cheddar cheese
  • 1 cup Shredded mozzarella cheese
  • 1/2 cup Grated Parmesan cheese
  • 1 teaspoon Mustard powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 cup Bread crumbs

Instructions

Step 1 – Prepare the Pasta

  • Cook the macaroni in a large pot of boiling salted water, just until al dente. Drain well.
  • Remember, the pasta will continue cooking in the oven, so keep it slightly firmer than usual.

Step 2 – Make the Cheese Sauce

  • Heat the butter in the same pot over medium-low. Stir in the flour and cook for about 1 minute, whisking constantly to prevent burning.
  • Gradually whisk in the milk, and continue to cook, whisking often, until the mixture is smooth and thickened.
  • After turning down the heat, add the cream cheese and stir it in until it melts.
  • Gradually add shredded cheddar, mozzarella, and parmesan cheeses, stirring until the sauce is creamy and smooth. Stir in mustard powder, salt, and pepper.
  • A good cheese sauce should coat the back of a spoon evenly without breaking or oiling out.

Step 3 – Combine and Bake

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked macaroni and cheese sauce, tossing to coat.
  • Transfer the macaroni mixture to a greased baking dish, and sprinkle evenly with bread crumbs.
  • It should be baked in a hot oven for 20 to 25 minutes, or until the top is golden brown and bubbly.
  • For an extra golden top, place under the broiler for 2-3 minutes—just keep an eye on it to avoid burning.

Notes

  • For a richer flavor, you can substitute half of the milk with cream.
  • If you prefer a crispy top, mix the bread crumbs with melted butter before sprinkling over the mac and cheese.
