Ingredients
  

  • 4 pieces Boneless chicken breasts
  • 1 cup All-purpose flour
  • 3 Garlic cloves minced
  • 1/4 cup Fresh parsley chopped
  • 1 cup Mushrooms sliced
  • 4 tbsp Butter
  • 2 tbsp Olive oil
  • 1 cup Chicken broth
  • 1/2 cup Heavy cream
  • To taste Salt and pepper

Instructions
 

Step 1 – Prepare The Chicken

  • Layer two pieces of plastic wrap over the chicken breasts.
  • Using a meat mallet, gently pound the chicken to about 1/2 inch thickness.
  • Season both sides with salt and pepper.
  • Cover the chicken in flour and shake off the extra.
  • Ensure the chicken is evenly coated but not clumpy!

Step 2 – Cook The Chicken

  • On medium-high heat, add the olive oil and 2 tablespoons of butter to a large skillet.
  • Add the chicken and cook for about 4-5 minutes on each side, or until golden and cooked through.
  • Do not put the chicken back in the pan.

Step 3 – Make The Sauce

  • In the same skillet, add the remaining butter.
  • Sauté the garlic and mushrooms until the mushrooms are golden and the garlic is fragrant.
  • Pour in the chicken broth and bring to a simmer, deglazing the pan by scraping the browned bits off the bottom.
  • After adding the heavy cream, stir it in and let it cook until it gets a little thicker.
  • A perfect sauce should coat the back of a spoon.

Step 4 – Combine And Serve

  • Return the chicken to the skillet, coating it in the sauce.
  • Cook the chicken for 2 to 3 more minutes to heat it all the way through.
  • Garnish with chopped parsley before serving.

Notes

  • Butterfly your chicken breasts if they’re particularly thick, to ensure even cooking.
  • If you prefer a thicker sauce, you can whisk a teaspoon of flour into the cream before adding it to the skillet.
