- 4 pieces White fish fillets
- 1 cup Shelled pistachios
- 1/2 cup Panko breadcrumbs
- 1/4 cup Parmesan cheese grated
- 1 tsp Garlic powder
- 1/2 tsp Paprika
- 1 tbsp Lemon zest
- 2 tbsp Olive oil
- To taste Salt
- To taste Pepper
Step 1 – Prepare the Pistachio Mixture
Preheat your oven to 375°F (190°C).
In a food processor, combine pistachios, panko, Parmesan, garlic powder, paprika, and lemon zest.
Pulse until the mixture is finely chopped but not powdery.
Transfer to a shallow dish.
Tip: Don’t overprocess the pistachios; you want some chunkier bits for that extra crunch!
Step 2 – Prepare the Fish
Pat the fish fillets dry with paper towels.
Brush each fillet with olive oil on both sides.
Season with salt and pepper.
Step 3 – Crust the Fish
Press each fillet into the pistachio mixture, coating it evenly on both sides.
Place the crusted fillets on a baking sheet lined with parchment paper.
- For an extra golden crust, place the fish under the broiler for the last 2-3 minutes of baking.
- If you don’t have a food processor, you can chop the pistachios manually; just be prepared for a bit of effort!
