Ingredients
  

  • 4 pieces White fish fillets
  • 1 cup Shelled pistachios
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup Parmesan cheese grated
  • 1 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1 tbsp Lemon zest
  • 2 tbsp Olive oil
  • To taste Salt
  • To taste Pepper

Instructions
 

Step 1 – Prepare the Pistachio Mixture

  • Preheat your oven to 375°F (190°C).
  • In a food processor, combine pistachios, panko, Parmesan, garlic powder, paprika, and lemon zest.
  • Pulse until the mixture is finely chopped but not powdery.
  • Transfer to a shallow dish.
  • Tip: Don’t overprocess the pistachios; you want some chunkier bits for that extra crunch!

Step 2 – Prepare the Fish

  • Pat the fish fillets dry with paper towels.
  • Brush each fillet with olive oil on both sides.
  • Season with salt and pepper.

Step 3 – Crust the Fish

  • Press each fillet into the pistachio mixture, coating it evenly on both sides.
  • Place the crusted fillets on a baking sheet lined with parchment paper.

Step 4 – Bake the Fish

  • Bake in the preheated oven for 12-15 minutes or until the fish is opaque and flakes easily with a fork.
  • Note: The exact cooking time will depend on the thickness of your fillets.

Notes

  • For an extra golden crust, place the fish under the broiler for the last 2-3 minutes of baking.
  • If you don’t have a food processor, you can chop the pistachios manually; just be prepared for a bit of effort!
