Equipment

  • A large frying pan
  • Wooden spoon
  • Measuring cups and spoons

Ingredients

  • 3 Bell peppers sliced (red and green)
  • 1 large Onion thinly sliced
  • 2 tablespoons Olive oil
  • 2 cloves Garlic minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 teaspoon Sugar
  • 1/4 cup Water
  • 1 tablespoon Red wine vinegar

Instructions

Step 1 – Prepare Your Ingredients

  • Wash and slice the bell peppers and onion.
  • Mince the garlic.
  • Note: Getting your ingredients prepped ahead of time is key to not turning your kitchen into a disaster zone.

Step 2 – Sauté the Vegetables

  • Heat the olive oil in the frying pan over medium heat.
  • Add the onions and garlic, sautéing until they start to soften.
  • Toss in the bell peppers, stirring frequently, until they are tender and slightly caramelized.

Step 3 – Season and Simmer

  • Sprinkle the salt, black pepper, and sugar over the vegetables.
  • Add water and red wine vinegar.
  • Reduce the heat to low and let it simmer for about 15 minutes, or until most of the liquid has evaporated and the peppers are lusciously soft.
  • Warning: Keep an eye on your pan! No one wants a scorched pepper.

Notes

  • If you want a bit of a kick, add a pinch of red pepper flakes.
  • For a sweeter taste, increase the sugar slightly. Adjust to your preference.
