  • 4 medium Potatoes diced
  • 1 large Onion chopped
  • 1 Red bell pepper diced
  • 1 Green bell pepper diced
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Step 1 – Prep Your Ingredients

  • Dice the potatoes, onions, and bell peppers. Keep them roughly the same size for even cooking.
  • Heat the olive oil and melt the butter in a large skillet over medium heat.
  • Note: Using a combination of oil and butter allows the potatoes to get crispy without burning.

Step 2 – Cook the Potatoes

  • Add the diced potatoes to the skillet in a single layer.
  • Fry for about 10 minutes, turning occasionally, until they start to turn golden brown.
  • Warning: Don’t overcrowd the skillet, or your potatoes will steam rather than crisp!

Step 3 – Add the Vegetables

  • Stir in the chopped onions and bell peppers.
  • Continue to cook for another 10 minutes, until the vegetables are soft and the potatoes are crispy.
  • Pro tip: Adding the vegetables after the potatoes ensures everything finishes cooking at the same time without any soggy bits.

Notes

  • For extra flavor, sprinkle some garlic powder or paprika over the potatoes before cooking.
  • If you’re in a rush, parboil the diced potatoes for 5 minutes before frying to speed up the cooking process.
