Equipment

  • Slow cooker or microwaveable bowl
  • Spoon or spatula
  • Measuring cups and spoons

Ingredients

  • 16 oz Velveeta cheese cubed
  • 10 oz Rotel diced tomatoes and green chilies undrained
  • 8 oz cream cheese cubed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp ground cumin
  • 2 tbsp fresh cilantro chopped
  • 2 tbsp jalapenos diced (optional)

Instructions

Step 1 – Prepare Your Ingredients

  • Gather all ingredients listed above.
  • Cube the Velveeta and cream cheese into small pieces for easier melting.
  • Note: Keep the tomatoes and chilies in their juice to help keep the dip moist and flavorful.

Step 2 – Combining Ingredients

  • Place the cubed Velveeta and cream cheese into your slow cooker or a large microwaveable bowl.
  • Add the undrained Rotel diced tomatoes and green chilies.
  • Sprinkle in the garlic powder, onion powder, and ground cumin.
  • Warning: Be careful not to over-season, as the Rotel tomatoes already contain a fair amount of spice.

Step 3 – Melting the Cheese

  • If using a slow cooker, set it to low and let it cook for about 2 hours, stirring occasionally.
  • For microwave cooking, heat the mixture on high for five minutes, stir, and repeat until fully melted and smooth.
  • Fact: The key to a perfectly smooth cheese dip is patience and frequent stirring to prevent burning.

Notes

  • To keep your rotel cheese dip warm throughout a party, leave it in the slow cooker on the ‘keep warm’ setting.
  • If the dip thickens over time, stir in a few tablespoons of milk to thin it.
