Equipment

  • A large pot for boiling pasta
  • A colander
  • A medium saucepan
  • A whisk
  • An oven-safe baking dish

Ingredients

  • 1 pound San Giorgio Macaroni
  • 1/4 cup Butter
  • 1/4 cup All-purpose flour
  • 3 cups Milk
  • 3 cups Cheddar cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 tsp Mustard powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Breadcrumbs

Instructions

Step 1 – Prep the Pasta

  • Boil the macaroni according to package instructions until al dente.
  • Drain and set aside.
  • Note: Cooking your pasta al dente ensures it doesn’t get too soft when baked.

Step 2 – Make the Cheese Sauce

  • In a saucepan, melt the butter over medium heat.
  • Stir in the flour and cook for about 1 minute to remove the raw flavor.
  • Gradually add milk, whisking continuously to prevent lumps.
  • Cook until the sauce thickens, about 5 minutes.
  • Remove from heat and stir in cheddar, parmesan, mustard powder, paprika, salt, and pepper until the cheese is melted and the sauce is smooth.
  • Warning: Keep stirring to avoid burning the sauce.

Step 3 – Combine and Bake

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked macaroni and cheese sauce.
  • Pour into the baking dish and sprinkle breadcrumbs on top.
  • Bake for 20 minutes until bubbly and golden brown.
  • Pro Tip: For a crispier top, broil for the last 2-3 minutes.

Notes

  • Cheese Variety: Feel free to experiment with different types of cheese for varying flavors.
  • Sauce Consistency: Adjust the thickness of the sauce with more or less flour based on your preference.
