- 3 pounds Beef chuck roast
- 2 tablespoons Olive oil
- 1 tablespoon Coarse salt
- 1 teaspoon Black pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika
- 3 sprigs Fresh rosemary
- 3 sprigs Fresh thyme
- 2 cups Beef broth
- 3 large Carrots sliced
- 4 medium Potatoes quartered
Step 1 – Prep the Meat
Rub the chuck roast with olive oil.
Mix salt, pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the meat.
Tie the rosemary and thyme sprigs together with butcher’s twine and attach them to the roast.
