Equipment

  • Chef’s knife
  • Cutting board
  • Measuring cups and spoons
  • Grill or grill pan
  • Tongs
  • Instant-read thermometer

Ingredients

  • 4 pieces 6 oz each Swordfish steaks
  • 2 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 2 cloves Garlic minced
  • 1/4 cup Fresh parsley chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

Step 1 – Prepare the Marinade

  • In a small bowl, combine olive oil, lemon juice, minced garlic, chopped parsley, salt, and pepper.
  • Whisk together until well blended.
  • Note: A good marinade not only flavors the fish but also helps keep it moist during cooking.

Step 2 – Marinate the Swordfish

  • Place the swordfish steaks in a shallow dish or a sealable plastic bag.
  • Pour the marinade over the steaks, ensuring each piece is evenly coated.
  • Refrigerate and let marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
  • Warning: Do not marinate for too long as the acid in the lemon juice can begin to cook the fish.

Step 3 – Prepare the Grill

  • Preheat your grill or grill pan to medium-high heat.
  • Ensure the grates are clean and brush them lightly with oil to prevent sticking.

Step 4 – Grill the Swordfish

  • Remove the swordfish from the marinade, letting excess drip off.
  • Place steaks on the hot grill.
  • Grill each side for about 3-4 minutes or until the fish reaches an internal temperature of 145°F (63°C).
  • Tip: Do not move the steaks too much once they are on the grill to get those perfect grill marks.

Step 5 – Rest and Serve

  • Transfer the grilled swordfish to a plate and let it rest for a few minutes.
  • Serve with a wedge of lemon and a sprinkle of fresh parsley.

Notes

  • Preheat: Always preheat your grill to ensure the swordfish cooks evenly.
  • Don’t Overcook: Swordfish is best enjoyed when it’s slightly pink in the center.
