  • 2 pounds turkey wing tips
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes

Step 1 – Prep the Turkey Wing Tips

  • Start by rinsing the turkey wing tips under cold water and patting them dry with paper towels.
  • Place them in a large mixing bowl, ready for seasoning.
  • Warning: Don’t skip drying! Moisture left on the skin will make it hard to get that crispy texture we’re after.

Step 2 – Season the Turkey

  • Drizzle olive oil over the wing tips to coat evenly.
  • Add salt, pepper, smoked paprika, garlic powder, onion powder, dried thyme, and red pepper flakes.
  • Toss everything until the turkey wing tips are evenly covered with seasoning.
  • Tip: If you’re short on smoked paprika, regular paprika works too, but that smoky flavor is worth it!

Step 3 – Arrange and Bake

  • Preheat your oven to 400°F (200°C).
  • Set the turkey wing tips on a wire rack over a baking sheet.
  • Roast them in the preheated oven for about 45-50 minutes, flipping halfway through.
  • Note: Flipping halfway ensures even cooking and makes each side golden brown.

Step 4 – Check Doneness

  • Insert an instant-read thermometer into the thickest part of one wing tip.
  • The internal temperature should be at least 165°F (74°C).
  • Fact: Wings continue to cook a bit after being removed from the oven. This rest period also allows juices to redistribute, making the meat juicier.

Notes

  • Rest after baking: Allow the wing tips to rest for about 5 minutes before serving. It locks in all that flavor.
  • Adjust the heat: For spicier wings, add a bit more red pepper flakes or even a dash of cayenne.
  • Experiment with spices: These wing tips are versatile! Try adding cumin or even a touch of curry powder for a different kick.
